This aperitif cocktail from The Modern in New York will appeal to those who would normally order a wine spritzer or kir royale, but it has a lovely bitterness from Dubonnet Rouge, an aromatized wine that contains quinine, herbs, and spices.

Note: Store open bottles of Dubonnet and vermouth in the fridge. They should last from 2 to 4 months. Sniff before using and discard if there are any nutty or oxidized aromas present.
