Make ahead meat for 60

So my sister is getting married and the family is making the food. Expected crowd: 60, Audience: All adults, most are beef lovers. The catch: the venue has no kitchen facilities. So I'm looking for ideas on a beefy or porky meat item that can either be cooked a day or two before and reheated the day of, or something that can just roast away in the oven or electric roaster for several hours the day of the wedding, with minimal fussing around. Any ideas and recipes would be appreciated!
