Must see things in NY

I'll be in Ithaca for work in October and since I can't imagine another time that I'll be on the East Coast in the near future, I'm taking the opportunity to spend about 3 days on my own in NYC afterward. If you only had these three days, what would you do? What would you see? Where would you eat? If only I could fit it ALL in!
