This is why I love SE. You can spout off even if no one's listening. Did you see the Times Sunday food mag? if so, u catch the (condescending) item instructing us what to order at diners? I guarantee I've been to more diners than that guy, and he's sooo wrong. He says don't order eggs cuz they take skill to cook and most of those guys aren't skilled workers. Get the chili, he says. I always get eggs. They may not be great but if you think chili in a crummy diner isn't straight from a can, you're smoking something. At least an egg is from an egg. The issue with these places is not the labor but frozen, canned stuff.
