I've got a friend who makes these amazing ground beef tacos. She seasons the beef, then rolls it out real thin between a couple sheets of plastic wrap, folds them into a corn tortilla then griddles them on a hot lightly oiled comal. The result is HEAVEN. Nice crispy tortilla on the outside, soft and juicy on the inside from the frying beef. My problem, I can never get my seasoning quite right. Mine are usually under seasoned. Her solution is to pinch off pieces of the raw GB as she seasons it and tastes it until it's right. Now, I've known her for 18(?) years and she has shown no ill effects from her tasting process. Me...I'm still not sold on tasting raw ground beef. Anyone else out there do this? If so, please share.
