After thinking I didn't like eggplant for the longest time, I am in love with it right now and I just bought two good-sized ones. What's your favorite recipe? My first experience was to cube it and cook it ala Mark Bittman on the stove top. Next experience was to roast it sliced. Both ways involved olive oil, salt/pepper and garlic. These were simple preparations and I'm ready to branch out. What should I make next?
