Back in Vogue

Trends, both food and fashion, come and go. Classics are always in style. They may reemerge revamped and vamped up, but remain essentially the same. Lately, we have seen many classic foods reemerge after having fallen from favor due to saturated fat content or preparation method/time. We're now seeing lard and other animal fats making a comeback as artificial transfats have been discovered to do more harm than good. Same with sugar vs. HFCS. What classics have you seen lately that made you happy for their return?
