- 2 1/2 pounds sweet potato, peeled and cut into 1 inch cubes
- 4 1/2 tablespoons olive oil, divided
- 2 teaspoons salt
- 2 teaspoons lime zest
- 1/2 teaspoon cayenne
- 3 tablespoons fresh lime juice
- 1/3 cup cilantro
Preheat oven to 425°F. Line a baking sheet with parchment paper.
In a medium bowl, toss sweet potatoes with 2 1/2 tablespoons olive oil and 1 1/2 teaspoons salt. Spread over baking sheet and bake for 25 minutes.
In a large bowl, whisk together lime zest, lime juice, cayenne, remaining 2 tablespoons of olive oil and 1/2 teaspoon salt.
Add cooked potatoes to bowl and mix well to combine. Add cilantro and toss gently. Serve warm.
