Spam and Egg Breakfast Sandwiches Recipe

For me, bacon and eggs, or sausage and eggs, are fine breakfast pairings on most mornings. But if given the choice, I'd most likely opt for a combination of Spam and eggs. Heck, if you catch me on the right morning, I might still go the Spam and egg route over a choice of steak and eggs (maybe).

There's just something about a salty slice of fried, crisp Spam paired with the runny yolk of a sunny side-up egg. I realize this magical pairing isn't new to any true Spamophile, but I'm trying to spread the Spam gospel to anyone else that will listen, and Spam and eggs are a good place to start.

And when the two perfectly paired proteins are wedged into a toasted Hawaiian roll slathered in jelly (pineapple, mango, and even strawberry, all work well), it makes for an epic breakfast sandwich that might even sway the harshest of Spam critics (one could only hope). The sweetness of the rolls and the jelly balance the salty Spam and the rich, runny egg yolk. Oh, and a squirt of Sriracha never hurts either. If a Spam and egg breakfast sandwich doesn't get you going in the morning, I'm not sure what will.

  • 2 tablespoons butter, divided

  • 4 Hawaiian sweet rolls or brioche buns, cut in half

  • Pineapple, mango, or strawberry jelly, for spreading on the rolls

  • 4 slices Spam, each 1/4-inch thick

  • 4 large eggs

  • Sriracha sauce (optional)


  1. Melt 1 tablespoon of the butter in a large non-stick skillet over moderately high heat. Place the sweet rolls, cut side-down, into the skillet and cook until just toasted, 1-2 minutes. Transfer the toasted rolls to a large platter, and spread the jelly onto each toasted side of the rolls.

  2. Place the Spam slices into the skillet and fry until golden brown and crisp, 1 to 2 minutes per side. Transfer the Spam slices to the bottom halves of each sweet roll.

  3. Reduce the heat to medium low, then melt the remaining butter in the skillet. Crack the eggs into the skillet, being careful not to break the yolks. Cover the skillet and fry the eggs just until the whites are set, 3 to 4 minutes. Place the fried eggs on each slice of Spam, then drizzle the eggs with the Sriracha if using. Top each sandwich with the remaining sweet roll tops. Serve immediately.
