Dried apricots, yogurt, and orange juice come together in an exotic-tasting morning libation: think mango lassi, but with apricots instead.

Ingredients
- 1 cup orange juice
- 1 cup plain yogurt, preferably whole milk
- 7 standard ice cubes
- 1/2 teaspoon orange flower water
- 1 to 2 teaspoons sugar (optional)
- 1 cup dried apricots, soaked in boiling water for 2 hours or room-temperature water overnight

Add orange juice, yogurt, ice, orange flower water, and sugar (if using) to blender. Drain apricots and add to blender. Blend on high until completely smooth, about 30 seconds. Divide between two glasses and serve immediately.
