- 1 cup strawberries, roughly chopped
- 2 cups vanilla ice cream
- 4 tablespoons mascarpone
- Seeds from 1/2 of a vanilla bean
- Additional strawberries for garnish if desired
Pulse the strawberries a few times in a blender then blend on medium high speed until smooth, about 30 seconds.
Add the ice cream, mascarpone, and vanilla bean seeds to the strawberry puree and blend on medium high speed just until smooth, about 30 seconds. Garnish with strawberries if desired and serve immediately.
