Toast With Refried Beans and Avocado Recipe

Tasty, filling, but not overly heavy, this is ideal breakfast fare for those who want something beside the bacon and eggs.

Ingredients
- 2 slices sandwich bread (see note)
- 1 cup homemade or store-bought vegan refried beans
- 1 avocado, thinly sliced
- A few slivers white onion
- Coarse sea salt such as Maldon or fleur de sel

Toast bread to desired level of doneness. Top with refried beans and avocado (mash with a fork if desired). Add slivered onions, sprinkle with salt, and serve.
