After a holiday season filled with rich, fatty, filling foods, it's nice to have a simple brunch dish that makes you feel good about what you're eating without totally losing that holiday spirit. This parfait does just that, combining good-natured Greek yogurt and granola with some sweet booze-soaked berries.
If you're just not feeling up to putting a lot of effort into brunch this week, then by all means use a store bought granola. But if you're going to invest in an entire bag of granola at the store, make sure it's one of the higher end products filled with fresh nuts and whole grains. And if you're a 0% fat Greek yogurt type of person, give the 2% a try—it's worth the calories, trust me.
- Yield:Serves 4
- Active time: 15 minutes
- Total time:15 minutes
- 16 ounces strawberries, halved
- 12 ounces blueberries or blackberries
- 1/4 cup bourbon (or whichever dark liquor you prefer)
- 2 tablespoons sugar
- 2 cups Greek yogurt (plain or vanilla works best)
- 2 1/3 cup homemade or store bought granola)
In a large bowl combine strawberries, blueberries and/or blackberries, bourbon, and sugar, and gently toss with a spoon. Let sit on the counter until berries begin to release their juices, 8 to 10 minutes.
Place berries in the bottom of a wineglass (or other pretty clear dish) followed by yogurt and the granola. Repeat in each glass, layering each parfait with a total of 6 layers. Serve immediately.
