The Old Gunwhale from The Drink Recipe

Pronounced "gun-ole," a Gunwhale is the upper edge of a ship's or boat's side. It's a perfect cocktail to come out of The Drink, a Williamsburg bar with a nautical vibe. The punch has the rich woodiness of bourbon without the tell-tale kick, so it's a little dangerous.

  • Yield:Serves 10, plus extra chamomile syrup


  • For the chamomile syrup:
  • 8 ounces water
  • 1 cup sugar
  • 2 tablespoons dried chamomile, or 2 chamomile tea bags (be sure to use high quality chamomile)
  • For the punch
  • 10 ounces bourbon
  • 8 ounces fresh grapefruit juice
  • 6 ounces chamomile syrup
  • 1 bar spoon Bittermen's spiced cranberry bitters

    If using loose chamomile, place on a double thick square of cheesecloth. Secure with twine. Place the sack, or teabags, in a small saucepan with the sugar and water. Bring to a boil, stirring occasionally, and let cook for 3 minutes. Remove from heat and let sit until it reaches room temperature.

    Combine bourbon, grapefruit juice, chamomile syrup, and bitters in a punch bowl. Add ice to the bowl and serve over additional ice.
