- 2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 12 tablespoons unsalted butter, at room temperature
- 1 1/4 cups packed dark brown sugar
- 1 large egg
Preheat oven to 375°F. Line two baking sheets with parchment paper.
In a medium bowl, whisk together flour, cinnamon, salt, and ginger. Set aside.
In a large bowl, beat together butter and sugar until creamy, about 3 minutes. Add egg and beat to combine.
Add flour mixture to bowl and beat until just incorporated. Drop dough by the rounded tablespoon onto prepared baking sheets.
Bake cookies until slightly brown and cracked on top, about 10 minutes.
