These olive oil cookies are flavored with absinthe and topped with sesame seeds.

- 3 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon cloves
- 1/8 teaspoon salt
- 1/2 cup sugar
- 3/4 cup plus 1 tablespoon olive oil
- 1/2 cup absinthe
- 1/4 cup sesame seeds
Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, cloves, and salt.
In a large bowl, beat together sugar and olive oil until combined. Add absinthe and beat until combined. Add flour mixture and beat until a dough forms. Dough may be slightly crumbly, but you should be able to press it together easily in your hands.
Roll dough into 24 walnut-sized balls. Place sesame seeds in a shallow bowl. Dip the top of each ball in sesame seeds. Place cookies on prepared baking sheet.
Bake cookies until dry and slightly golden, about 20 minutes.
