Damson Sour Recipe

Damson gin liqueur adds a fresh new flavor to this pisco sour from Aldea in NYC. Brian Block uses Macchu Pisco. Arrope for the garnish is available online, but feel free to make the drink without it.

Ingredients
- For the agave syrup:
- 1 quart agave nectar
- 1 pint water
- For the cocktail:
- 1 egg white
- 1 ounce pisco
- 1 ounce Averell Damson Gin Liqueur
- ½ ounce lime juice
- ½ ounce agave syrup
- Ice
- Dash of arrope (optional)
Directions

For the agave syrup: warm agave nectar with water, stirring frequently, until nectar dissolves. Let cool.

Add eggwhite, pisco, Averell, lime, and agave syrup to a cocktail shaker. Froth with wand-frother. Fill with ice. Shake well and strain into wine glass. Top with small dash of arrope.
