Who doesn't love a good pumpernickel bagel? Wouldn't it be nice if there were a cocktail that perfectly paired with that dark rye? What about rye? It's an old-fashioned drink, true, but here it's been updated with a dash of caraway simple syrup and lightened up with a splash of soda.
Rye is making a major comeback, and this refreshingly dry cocktail perfectly complements the spicy tobacco notes that often get buried in rye's sweeter cousin, bourbon. Although caraway is botanically more closely related to carrots than the rye grain, its warm, sweet hay flavor provides floral top notes to the cocktail with just a few drops of syrup. And the fizz of soda keeps things light and drinkable, making this an ideal beverage for a breakfast of brown bread, smoked fish, and capers.

- For the Caraway Simple Syrup:
- 1/2 cup water
- 1/2 cup sugar
- 2 tablespoons caraway seed
- For the Cocktail:
- 2 ounces rye whiskey (such as Bulleit)
- 1/4 teaspoon caraway simple syrup
- 4 ounces club soda
- Garnish: cucumber slice
For the Caraway Simple Syrup: In a small saucepan, simmer the water, sugar and caraway seeds together over medium heat for 10 minutes, stirring. Add more water if the syrup gets too thick to stir easily.
For the Cocktail: Fill a highball glass halfway with ice. Add rye, syrup, and club soda. Stir gently. Garnish with cucumber slice and serve.
