Pineapple Red Pepper and Cucumber Salad Recipe

Ingredients
- For Salad:
- 2 cups chopped pineapple
- 2 cups chopped seedless cucumber
- 1 large red pepper, cut into 1/4 inch pices
- 2 tomatoes, roughly chopped
- For Dressing:
- 1 teaspoon fish sauce
- 1 teaspoon soy sauce
- 1 tablespoon sugar
- 4 tablespoons lime juice
- 2 tablespoons vegetable oil
- 1 garlic clove, minced
- 1 cup chopped cilantro
- 1/4 cup chopped mint
Directions

Make Dressing: In a small bowl, combine fish sauce, soy sauce, and sugar. Whisk until sugar is dissolved.

Add lime juice, vegetable oil, and garlic clove. Whisk until well combined.

Make Salad: In a large bowl, combine pineapple, cucumber, red pepper, and tomatoes.

Pour dressing over salad. Add cilantro and mint and toss to coat.
