When it comes to pie, my mantra is "I must increase my crust." But even carbohydrate addicts find themselves with extra scraps of pie dough from time to time. And I now have the best solution for making use of them: Pie Fries.

I came across this idea from Seattle piemaker Dani Cone, whom I suspect is a genius, and whose High 5 Pie offerings have been rated some of the best in the country.

The concept is simple behind these pie fries: simply put your pie scraps on a baking sheet, slice them into fry-sized pieces, brush with butter, cinnamon and sugar, and bake until crispy. Want extra cute points? Put 'em in pillow boxes (available at most craft supply stores) or paper cones and serve with jam for dipping.

  • Pie dough scraps from cutting a 10-inch pie
  • Melted butter, to taste
  • Granulated sugar
  • Cinnamon
  • Nutmeg or other spices of your choice
  • Jam or preserves, for dipping

    Collect your pie dough scraps. They may already be in slivers; if not, put them together into one clump, and roll out. It's OK if the dough looks slightly lumpy when rolled out.

    Slice the dough into "fries", approximately the size of fast food restaurant-style fries.

  3. 3.

    Place the cut "fries" on a baking sheet lined with parchment paper.

  4. 4.

    Brush with as little or as much butter as you'd like using a pastry brush.

    Sprinkle with sugar, cinnamon, and any other spices you'd like (I used nutmeg).

    Bake in a preheated 375 oven for 10 minutes, or until crispy around the edges.

    If you're going for extra cute points, cut pillow boxes in half for a sweet presentation.

    If desired, affix labels.

    Serve in the assembled pillow box halves with jam on the side for dipping.
