Maple Cornmeal Cookies Recipe

- Yield:about 3 dozen cookies, or a bunch more small ones
Ingredients
- 2 sticks butter
- 1/2 cup brown sugar
- 1 cup maple syrup
- 2 teaspoons vanilla extract
- 2 eggs
- 3 cups all purpose flour
- 2 cups cornmeal
- 1 teaspoon baking powder
- Pinch salt
Directions

Heat the oven to 375°F. Cream together the butter and the sugar; add the maple syrup, vanilla and egg and beat until well blended.

Combine the flour, cornmeal, baking powder, and salt in a bowl. Add the dry ingredients in about 3 portions, and beat to make a soft dough that can be dropped from a spoon.

Drop tablespoon-sized mounds of dough about 3 inches apart in rows and columns on ungreased baking sheets. Bake until the edges are browned, about 10 minutes. Cool for about 2 minutes before using a spatula to transfer the cookies to a rack to finish cooling. Enjoy.
