Peanut Butter and Pumpkin Soup Recipe

Ingredients
- 2 tablespoons olive oil
- 2 large yellow onions, coarsely chopped
- 2 quarts chicken or vegetable stock
- 1/2 cup natural, unsweetened peanut butter (I used Peanut Butter & Co. Old Fashioned Smooth)
- 2 cups Libby Easy Pumpkin Pie Mix
Directions

Heat the olive oil in a large pot over a medium flame. Add the chopped onion and sauté until translucent.

Add the stock and bring to a simmer.

Add the peanut butter and stir until it is incorporated into the stock. Add the pumpkin and stir until smooth.

Let simmer for another five minutes and remove from heat.

Serve warm with a garnish of pumpkin seeds and chopped peanuts.
