This delicious and intense cocktail—a distant cousin of the Dark and Stormy—is tangy and much less sweet than you'd expect, with a brooding background of ginger root lurking just behind the richness of rum. You can thin it out more with ginger beer if you like, but we enjoy this drink nearly straight up, with just a little fizz to lighten.
Fresh lime juice is essential here; don't buy the bottled stuff. We used Coruba rum, but Brugal and Goslings would work as well.

- 3/4 ounce dark rum
- 3/4 ounce King's Ginger
- 1/2 ounce freshly squeezed lime juice
- Dash Angostura bitters
- 1 ounce ginger beer, or more to taste
- Garnish: lime twist
Fill a cocktail shaker with ice. Add rum, King's Ginger, lime juice, and Angostura. Shake well and strain into an ice-filled old fashioned glass. Top with ginger beer and garnish with lime twist.
