Summer fruit can be a beautiful inspiration for baking, but when climbing temperatures turn inspiration into perspiration, even the most zealous bakers are inclined to throw up our hands and say, "forget this!". For days when temps are pushing triple digits, it's helpful to have at least one great recipe that doesn't require an oven. On those sorts of days, I turn to crumb crusts, cool creamy pudding, and fresh summer fruit.
This pie is the delicious, fuss-free solution to beating the summer oven blues. The crust, made with graham cracker crumbs, requires absolutely no baking: just pulverize, mix, shape, and chill. The homemade pudding requires a tiny bit of stove time, but the beautiful, cool, creamy pudding that results is totally worth it. This pie is the perfect expression of beautiful summer blueberries, and it's best enjoyed in the shade.
