This pungent twist on the classic Old Hickory Cocktail substitutes uses bittersweet, vegetal Cynar instead of sweet vermouth and dry Manzanilla sherry instead of dry vermouth, with the proportions adjusted a bit to balance the stronger flavors.
Note: Bittermens Burlesque Bitters and Hopped Grapefruit Bitters can be found at liquor stores and online.

Ingredients
- 1 3/4 ounces Cynar
- 1 1/2 ounces Manzanilla sherry
- 8 drops Bittermens Burlesque Bitters (see note)
- 8 drops Bittermens Hopped Grapefruit Bitters (see note)
- Garnish: grapefruit twist

Add the Cynar, sherry, and both bitters to mixing glass. Fill 2/3 full with ice and stir until well chilled, about 20 seconds.

Strain into a chilled cocktail glass. Garnish with the grapefruit twist and serve.
