This quick and delicious smoothie has just three ingredients: ripe Ataulfo mango, frozen blackberries, and unsweetened kefir (I used Nancy's Organic Plain Lowfat Kefir, but you can also make your own.) The result is rich and thick, tangy and tart, with just a touch of sweetness from the fruit.
1 large ripe Ataulfo mango, peeled and roughly chopped (about 1 cup)
1 cup plain unsweetened kefir
1 cup frozen blackberries (4 1/2 ounces)
Add mango, kefir, and blackberries to a blender. Pulse a few times to break up, then blend until smooth, about 20 seconds. Serve immediately.
