Our parameters? No more than four ingredients (plus salt, pepper, and perhaps a squeeze of lemon or olive oil), a prep time of no more than 15 minutes, and no special equipment required. Just great seasonal ingredients put together without much fuss. Best consumed al fresco in bare feet, with a glass of rosé or a refreshing beer.
