Ingredients

For the Simple Syrup:

  • 1 cup sugar

  • 1 cup water

For the Cocktail:

  • 3 centimeter-thick lime slices (round)

  • 1/2 ounce simple syrup

  • 1/2 ounce Meyer lemon juice

  • 1 ounce unsweetened coconut milk

  • 1 1/2 ounces vodka

  • 1 to 2 ounces ginger beer

  • Garnish: additional lime slices, if desired

Directions

  1. For the Simple Syrup: Dissolve sugar in water over medium heat. Bring to a boil, then reduce to a simmer for 10 minutes, stirring frequently. Let cool.

  2. For the Cocktail: Muddle limes and simple syrup in cocktail shaker until the limes are juiced.

  3. Fill cocktail shaker with ice, then add Meyer lemon juice, coconut milk, and vodka. Shake for 10 seconds.

  4. Strain cocktail into a Collins glass filled with ice. Top with ginger beer and add lime slices to garnish if desired. Serve with a straw.
