These chunky campfire cookies include all your summer s'mores ingredients: chopped up Hershey's bars, graham crackers, and marshmallows.
Note: Mallow Bits are available in many grocery stores or online. They can't be substituted for regular mini marshmallows.
1 cup (5 ounces) all-purpose flour
3/4 cup graham cracker crumbs (from about 4 sheets graham crackers)
1/2 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter, at room temperature
1/4 cup sugar
1/4 cup brown sugar
1/2 teaspoon vanilla
1 large egg
1 cup Mallow Bits
1 cup coarsely chopped milk chocolate, preferably Hershey's
Adjust oven rack to middle and lower positions and preheat oven to 350°F. Line two baking sheets with parchment paper. In a medium bowl, whisk together flour, graham crumbs, baking soda, and salt; set aside.
In a large bowl, beat together butter, sugar, and brown sugar a handheld electric mixer until fluffy, 3 minutes. Beat in vanilla and egg. Add dry ingredients to bowl and beat just until dough comes together.
Use a rubber spatula to fold in Mallow Bits and chocolate. Drop dough by the rounded tablespoon onto prepared baking sheets. Bake cookies until golden, about 12 minutes. Let cool 3 minutes then transfer to a wire rack to finish cooling.
