If you've been eyeing the Baking Steel Griddle, but have been turned off by the weight, the size, and, okay, the price, today might be your lucky day. After hearing feedback from Serious Eaters and other home cooks, the folks at Baking Steel have released the Mini Baking Steel Griddle, a solid slab of thick steel that sits neatly over a single burner.

To be honest, since getting this thing at home, I've pretty much retired my full-size Baking Steel Griddle to the oven, while the Mini sits permanently atop one of the burners on my stove. Just like its big brother, it has a pebbled surface on one side—ideal for getting extra-crisp, better-than-a-baking-stone crust on your pizzas (and, unlike a baking stone, this thing is going to last forever)—and a polished surface with a grease channel on the flip side. The griddle arrives as shiny steel, but with just a few uses, it seasons up into a dark, slick nonstick surface that you can use for everything from pancakes to eggs to hamburgers to grilled cheese.


It's 11.5 inches square and three-eighths of an inch thick, and it clocks in at 15 pounds, so it's not something you're gonna want to pull in and out of a drawer every day. But if you're anything like me, you won't have to, because it's gonna find a long-term home on your stove.
