Most pies are season-specific desserts: peach and cherry in the summer, apple and pumpkin in the fall. But unless you're fortunate enough to reside in tropical climes (where there is in fact a coconut season), Coconut Cream Pie is a pie to be enjoyed all year round.
This particular coconut cream pie, adapted from Sonya Jones' Sweet Auburn Desserts is a spot on rendition of the Southern classic, a mile high with equal parts gooey coconut custard and mounds of fluffy whipped cream all topped off with a shower of toasted coconut flakes.
It's the sort of pie that can be enjoyed equally whether it's a blustery winter day (there really is something snow-like about those coconut flakes) or in the middle of the summer where the cool custard and whipped cream act as a sweet refresher.
