This take on a green smoothie is buttery and delicious thanks to ripe avocado. Don't worry about mincing the ginger too finely since you'll end up putting it in the blender.
- Flesh from one ripe Hass avocado, about 2/3 cup
- 2 cups plain whole milk kefir
- 1 teaspoon peeled, roughly chopped fresh ginger
- 4 fresh mint leaves
Combine all ingredients in a blender and blend on high until smooth, about 1 minute. Pour into two glasses and serve immediately.
