This spin on a bellini adapted from 101 Champagne Cocktails by Kim Haasarud is a little richer, a little boozier, and a little more fun than your standard brunch drink.
We used The Bitter Truth Apricot, but another apricot brandy such as Marie Brizard Apry would work well, too.
Note: This recipe makes one drink. If you're serving a crowd and don't want to shake drinks to order, prepare a large batch of the apricot nectar, cognac, and apricot brandy mixture in advance in a bottle with a little water and chill. Then when your guests arrive, you can divide the mixture among glasses and top up with sparkling wine. (For more tips on batching drinks, see this guide.)

Apricot Bellini Recipe
Ingredients

1 1/2 ounces apricot nectar

3/4 ounce apricot brandy

3/4 ounce Cognac

3 ounces sparkling wine

Mint sprig for garnish
Directions

Combine apricot nectar, cognac, and apricot brandy in a cocktail shaker with ice. Shake vigorously. Strain into a chilled champagne flute.

Add sparkling wine and stir gently. Garnish with a mint sprig and serve immediately.
