Snapshots From the Future of Food Dinner With Maxime Billet

"The world of food we love so much is in crisis," declared Maxime Billet, of Modernist Cuisine/Culinary Lab fame. On Wednesday evening, Billet and cohost Ted Allen presided over acclaimed chefs, culinary students, and industry supporters at the International Culinary Center for A Feast to Celebrate the Future of Food. The event, held in support of The Culinary Trust, aimed to raise both funds and awareness, calling for the democratization of food and increased, sustainable change through educational initiatives in the culinary sphere.

Participating chefs manned interactive stations, presenting everything from paani poori (we were hand-fed by 660 Curries chef Raghavan lyer) to "apocalypse caviar" from Elizabeth Falkner and—a crowd favorite—Michael Cirino's cryo-"popcorn" ice cream. Helping out were students from the International Culinary Center and Manhattan's High School of Food and Finance, along with some even some younger representatives from the food-focused Newark charter school, Philip's Academy.
