Open Thread: What's Your Favorite Thanksgiving Side Dish?

In case our Thanksgiving Survival Guide didn't tip you off, we're deep into Thanksgiving mode here at SE, and with the holiday comes a lot of capital-F Feelings. Specifically, feelings about which side dish is the best. Here's a sampling of the responses I got when I casually threw the question out to staffers:

Max: "STUFFING IS THE ONLY THING THAT MATTERS. I also can't imagine Thanksgiving without mashed sweet potatoes with some chipotle. They're about equal parts sweet potato and butterfat, and damn they're good."

Kenji: "STUFFING is the only thing that matters to me, and I like it simple. Sage, onions, lots of butter and stock, white bread, perhaps some sausage if I'm feeling decadent, and plenty of crisp bits."

Ben: "This is the stupidest question I've ever heard. Stuffing! Is this a trick or something??"

Nick: "Does the turkey skin count as a side dish? Otherwise, I'm with Max for this one; stuffing is what I crave—preferably stuffing that has been soaked to the core with gravy."

Maggie: "My mom is an amazing cook, but used to make weird stuffing substitutes involving things like wild rice and hazelnuts. So perhaps I'm making up for lost time, but stuffing is so much my favorite that sometimes we just make stuffing for dinner once Thanksgiving is on the horizon. (To taste-test with Thanksgiving wines, usually, but also just because it's awesome.)"

Niki: "This is how I feel about stuffing."

So...that's a lot of stuffing. For what's worth, there were two other opinions:

Carrie: "I'm obsessed with my mom's cranberry relish. It's made with fresh cranberries, oranges, and almonds, and I always look like a crazy person with my 3x helping."

Robyn: "Uhh damn, I must've been the only poor sap who didn't grow up with stuffing. I'll blame it on Chinese immigrant parents. So my choice would be mashed potatoes. I just really liked mashed potatoes when I was a kid for some reason."
