One-Pot Wonders: Steamed Fish With Chard and Potato Hash

A quintessential breakfast sidekick, hash browns are hearty, filling and perfect for soaking up a hangover or building up an energy reserve for the day. But they also work beautifully as a quick weeknight meal, which is what we're all about over here.
On their own, hash browns aren't much to look at, but stir in some nutrient-packed chard and top it with a healthy protein like steamed fish, and you've got yourself a delicious one-pot, weeknight meal in 20 minutes—hard to beat, right?
You'll probably see a lot of hash brown recipes that call for boiling the potato first and then dicing and cooking it. With one-pot dishes, that's not really an option, and takes too much time, so we're going to reverse the process and dice the potatoes, cook them in the pan, and then add a little broth to finish them off, while also cooking the chard and steaming the fish. If that doesn't make you want to throw your arms up in the air with the hashtag "#winning" flashing beneath you, well, I don't know what does.
Back in reality, you can also swap the chard for kale or spinach if those are your greens of choice, but as fall is hitting us full speed, it's nice to embrace the seasonal ingredients that are inevitably coming our way.
