Tips and tricks for making the best sandwiches at home.
The Fried Green Tomato Sandwich ($8) at Serious Biscuit in Seattle proves that, with only a few alterations, the classic breakfast sandwich can rocket to new heights. Between two halves of a warm, flaky biscuit, this killer sandwich features a fried egg, two hefty slices of bacon, a smear of remoulade, and thinly sliced, cornmeal-battered fried green tomatoes.
For a sandwich to be truly excellent, it needs to be constructed with top-quality ingredients, but finish as something even tastier than the sum of its parts when fully assembled. That's exactly what this sandwich accomplishes. Taken separately, some elements border on too aggressive, like the bacon (which is particularly salty), and the highly acidic tomato. But taken together, everything is perfectly in sync. The fried egg has a lacy crisp edge, the remoulade adds a mellowing effect, and the buttery biscuit proves to an ideal vessel for such powerful flavors.
I'm normally not a fan of runny yolks, but with all of the crisp, crunchy, flaky textures going on in this sandwich, the over-easy yolk brings some welcome moisture. If gooey yolks aren't your thing, ask for some black pepper tabasco gravy ($2) on the side for dousing or dunking.
