You don't see chicken burgers a lot, and I'm not sure why—they're light, super easy, and incredibly delicious, especially when you pack them with flavor boosters like garlic, ginger, scallions, and cilantro. Plus, a sriracha dipping sauce is clutch.
I have to give credit for this recipe idea to my sister, Ashley, who told me how Chef Katie Carey had made something similar for family meal one day. I owe them both a big thank you because I will be making this recipe over and over again. It's one of those dishes that you make, bite, and go, "Whoa." Granted, these are all bold flavors that I happen love; if you're not a fan of ginger, garlic, cilantro, and sriracha, then you might have a very different reaction.
To make it healthier, you can skip the buns and make it more of a wrap, using the extra butter lettuce. But whatever you do, do NOT skip the sriracha and mayo dipping sauce—it was so good that I was actually eating it by the spoonful. I would say that another option would be to use low-fat Greek yogurt instead of the mayo, but it's really so delicious that it would be a shame to make the switch.
