A Sandwich a Day: The MC Schnitzel from Senate in Cincinnati

A Sandwich a Day

A different sandwich profiled every single day.

In this great nation of ours, one could eat a different sandwich every day of the year—so that's what we'll do. Here's A Sandwich a Day, our daily look at sandwiches around the country. Got a sandwich we should check out? Let us know. —The Mgmt.

Senate, in Cincinnati's trendy Over-the-Rhine neighborhood, is known for its varied and fancy hot dog offerings. In addition, the menu offers several delicious non hot dog items ranging from sandwiches to barbecue pig tails.

One of the sandwiches currently featured is the MC Schnitzel ($13). Call it the Emcee Schnitzel, the McSchnitzel, or whatever else you'd like when you visit, but be reassured that you're ordering one masterpiece of a sandwich.

The multiday sandwich preparation starts with pork belly, butt, jowl, and trotters, which are braised with mirepoix and garlic. The rendered gelatin from the trotters seeps into the marvelous meat milieu which—when shredded, packed in a pan, and left to chill overnight—sets into a terrine loaf. The following day, it's sliced into thick slabs, floured, dipped in egg wash and panko, deep fried, and served up to lucky diners. That's one fancy-pants schnitzel.

As if that weren't enough, the generous serving of schnitzel is topped with sautéed onion, bacon, brown sugar caramelized apples, and a touch of mustard for zing. Senate does sneak in a bit of lettuce underneath the schnitzel, so you don't have to feel entirely guilty when gorging yourself. The sandwich also comes with an adorable tiny gherkin pickle skewered on top, which I love.

Senate rotates their menu, but I have it on good authority that this sandwich will be on the menu until May, so get it while you can.
