If a Caprese salad got into a fistfight with St. Patrick's Day and they stumbled onto a hot griddle, the result would be the Burgundian's Pesto Corned Beef Grilled Cheese ($12). It's a mouthful for sure, but naming things is not this pub's strong suit: they had to change from their original name, the Publican, because of pressure from the restaurant of the same name in Chicago.
Their strong suit? Delicious things of all kinds. Local craft beer, cocktails, and, oh, yeah, this crazy sandwich that sounds like the morning after a threesome of an Irish guy, his Italian wife, and a drunk American. It's built, like all the best grilled-cheeses, on buttered and grilled sourdough bread. Multiple layers of melting come from the Gruyère and cheddar cheeses, which wind their way through the house-brined and beer-braised corned beef, helping to hold together the falling-apart-tender meat. Dotted about in this vegan's nightmare are spotlights of roasted red peppers, a bright pop in a rich sandwich. The savory icing on the meaty cake is a bold hazelnut pesto.
The Pesto Corned Beef Grilled Cheese sounds messier than a Britney Spears meltdown, but, impressively, all the ingredients are tucked serenely into their own spots, and it could easily qualify as a one-hander—all the better for drinking whatever is on tap with your sandwich.
