Weekend Cook and Tell Round Up: Tomatoes to Die For

Our last challenge for Weekend Cook and Tell was for all of you to share the tomato dishes that make you giddy. We called this Tomatoes to Die For. Talk about tomato love. You know there are strong feelings when comments enter five paragraph territory. It was hard to edit this excitement down, but here are the dishes we equally died over.

yayfood looks forward anxiously to tomato season all year long. It was hard to be patient, but yayfood made it and made Pan con Tomate to celebrate. It's essentially a Spanish version of bruschetta, except typically served for the breakfast meal or as a snack.

Fortunately for tomatoes, summer heat is a good thing. This may not be fortunate for those feeling the heat. remcooks created a refreshing summer dish of Poached Nairagi (Striped Marlin) with Lime Basil Pesto on Sliced Tomatoes. Bright flavors and soft fish make for fantastic dance partners.

La Tavola Marche advises to let the tomatoes speak for themselves and to not overdress them. Here you can find Savory Slow Roasted Tomatoes with Filet of Anchovy as a little something to embrace but not overwhelm your tomatoes.

claireOOTO couldn't help but chime in and exclaimed, "Ack! This is the kind of topic that gets me in trouble because I post too many links. Freakin love tomatoes. Love them!!" To prove her love, she posted seven, yes seven, recipes. Honestly, you should just go here and choose for yourself. But for now, we'll treat you with Goat cheese & caramelized onion tart with arugula & pine nuts. Honestly, while using all caps to say, "I LOVE TOMATOES!!!" might be a bit much for some, we totally get the excitement. It's good that we get each other here.

What's that you say? Bacon makes everything better? ag3208 thought so. To prove it, ag3208 made Provencal Tomatoes but added bacon to "make it a bit more substantial entree for a meat eater" and said it turned out great.

lemonfair likes to sit around the house just eating bowlfuls. (we're not sure this is a bad habit to have.) But if you're looking for a how-to, here you go: "My one composed tomato dish starts with cooked linguine. Saute mushrooms til caramelized, add sliced onions and then briefly minced garlic. Add wedges of ripe tomatoes (I don't bother to peel), and cook only briefly. Deglaze with some white wine. Add linguine and feta. Remove from heat just before feta is fully melted into the wine and juices. Can add chicken, but I like this as a light vegetarian meal."

zahavah offered two tarte tartin options. We'll offer you the second, more savory Tomato Tarte Tatin. It has "intense tomato flavor due to tomato paste and pomegranate syrup/pomegranate molasses (which is easy to find in any middle eastern grocery store)and sprinkled with mint." zahava, our mouths and eyes thank you.

Finally, we have to finish with mangotomato. The name tells us what she loves. To honor her namesake, she made Tomato Jam; perfect for dinner parties, large and small.
