Though adults may have the upper hand when it comes to filing tax returns, it's the kids who first learn the meaning of comfort food. But you didn't have to grow up eating grilled cheese sandwiches to like them. All that is required is that you love cheese. Is that so much to ask?

I would take the Grilled Cheese Royale ($8) at The Curious Palate any day, and I would justify my choice with the line, "It ends with royale." Skip the limp, pre-sliced squares and substitute cheeses with character. First, a 4-year Quebec sharp cheddar tells you, "This is going to be good." Next, the nutty flavor of Gruyère keeps you interested bite after bite. Finally, the mild undertone of fresh mozzarella holds everything in check and balance—after all, this is an adult sandwich.

In short, this is three essential cheeses melted into a harmonious triad between two sturdy slices of grilled wheat bread. The bread is dense and has a satisfying crunch, exactly what you would want and expect in a grilled cheese. Excuse me, grilled cheese royale.
