Asparagus can be used in countless ways, but one of the best versions is raw in a salad. This salad from Food52 is incredibly simple and requires zero cooking time. All you need is a vegetable peeler to get the thin strips of asparagus that will be paired with mint and lemon juice. A light shaving of pecorino or parmesan cheese at the end will lend the saltiness needed to bind all the ingredients together. The crunchiness of the raw strips is a refreshing take on the stalks of the asparagus.
