Tips and tricks for making the best sandwiches at home.
Ask Matt Lewis—owner, chef, and chief raconteur at Where Ya At Matt—where the inspiration for his peacemaker sandwich came from, and he gets a little glint in his eye. Streetcar Sandwiches, he says, and begins to wax nostalgic about the long-closed shop that had a spot on Carrollton in New Orleans until the late Nineties. In the future, Seattleites may carry that same glint in their eyes when talking about Matt's sandwiches, as he takes this New Orleans classic to the Seattle streets in his food truck.
In its trip from the south, the version of the Peacemaker that Matt serves has picked up a few Northwest twists. Piled onto the loaf of bread, baked specially for the truck's daily rounds, are the usual crispy and plump fried oysters, the bacon, and the cheddar cheese that make up the essential peacemaker po' boy.
But here the bacon is house-cured and the spice comes from a local favorite, Mama Lil's spicy bread-and-butter pickles, cutting through the richness of the sandwich. It's a big beast of a meal for sure, but each bite of bayou flavor will bring you back for another one.
On any given day, the truck is patronized by New Orleans ex-pats, people just back from a visit to the Crescent City, and anyone else who likes a good sandwich. Matt's love for great food and all things NOLA can be tasted in his food and heard in his tales, as he stands outside the truck, taking orders.
