Meet and Eat: Will Gibney, Serious Eats Summer Intern

Guilty pleasures? McDonald's hashbrowns and Applebees boneless buffalo wings. The latter is definitely something to not spread around. I am also a huge Eagles fan (the band).

Describe your perfect meal. It sounds cliché, but really anything cooked by my mom. Braised rabbit, white rice, and roasted kale is one of my favorites.

What food won't you eat? I dislike dill and parsley. Scratch that, hate dill and parsley. Anything else is fair game.

Favorite food person? Chef Grant Achatz, videographer Daniel Klein, my mom.. can't pick just one.

When did you first realize you were a serious eater? When, at age 12 or so, I was genuinely excited to receive a spray bottle of balsamic vinegar from my mom as a present.

What do your family and friends think of your food obsessions? I definitely come from a family of "foodies" so food is always a topic of conversation at the dinner table.

Favorite food sites or blogs (besides Serious Eats)? The Perennial Plate for food videos; for restaurant reviews and that type of food blog, it's kevineats, and gourmet traveller

Everyone has a go-to person they call for restaurant recommendations. Who's yours? Ferran Adria? Just kidding, my family is pretty in tune with the New York food world so I can ask any of them for a recommendation.

What is your favorite meal of the day and where do you get it? Dinner, made at home. I enjoy restaurants, but at the end of the day, a meal at home tops all.

Do you ever cook? What's the best dish you make? I've become more interested in cooking as I've gotten older and I definitely cook a lot now. I really love simple dishes so I recently made linguine with swiss chard, sauteed fennel, and a cilantro oil. Delicious the next morning with a runny yolked-egg.
