If you've ever stood in line for Richie Nakano's Hapa Ramen, you get what all the fuss is about. Since he started slinging noodles at the Ferry Building's Tuesday and Thursday Farmer's Market, the demand for his innovative and deeply satisfying dishes has steadily grown. In addition to being a fixture at the Fort Mason Off-The-Grid on Fridays, Nakano will be opening a brick-and-mortar restaurant in the Fillmore this summer.
While we anxiously await the restaurant's arrival, Nakano has been holding pop-ups to test out possible menu items. Tuesday night's cash-only, BYOB pop-up at Wing Wings included a number of items listed as "Hapa Summer." From thinly sliced kanpachi to a towering pig's ear salad, the menu reflected Nakano's creative approach to traditional Asian flavors, and his deft hand with all manner of ingredients. One thing not on the menu: ramen. Then again, if we have a hankering for a steaming bowl of noodles, we know where to find the Hapa crew for now.
