February 16 is National Almond Day, a day set aside by the Almond Board of California to celebrate all things almondy. Apart from being tasty, almonds are also very good for you. In fact, a one-ounce (160-calorie) handful of almonds is an excellent source of vitamin E and magnesium.
This year, National Almond Day had me thinking about this video in which chef Dan Barber of Blue Hill at Stone Barns talks about trying to grow almond-flavored carrots by scattering defatted almond meal on the carrot beds on his farm. Though his experiment didn't quite work out the way he wanted it to, it got me thinking about using nuts in different, unexpected pairings.
Green beans with almonds, sure, but what about beets with almonds? Asparagus and almonds? Or artichokes and almonds?
My favorite almondy snack these days are Almondina cookies, a nice treat with a cup of coffee or tea.
