Tips and tricks for making the best sandwiches at home.
St. Honorè is one of the best bakeries in Portland. Normandy-born head baker and owner Dominique Geulin received the "Meilleur Ouvrier de France" award in the boulangerie category, an extremely prestigious honor, yet the bakery still manages to feel friendly and casual. The croissants, baguettes and pastries are all outstanding, particularly the orange gateau, canelés and the chouquettes, which are puffy pastry balls made with a pâte à choux and sprinkled with rock sugar, handed to you in a little bag.
Lunch offerings range from soups and salads to traditional French sandwiches. Get the pan bagnat, a rustic roll filled with tomatoes, cucumbers, onions, a mix of parsley, oregano and mint and topped with tuna, hard-boiled egg (anyone else a sucker for hard-boiled eggs in sandwiches?) and leafy lettuce. A favorite in southern France, pan bagnat (pan ban-yah) means "bathed bread." The bread is meant to absorb some liquid from the filling, so it's fine to assemble it entirely ahead of time. The bread soaks up the vinaigrette, becoming soft yet still retaining some crunch.
