Experiencing American fare firsthand shaped Carmellini's culinary outlook tremendously, leaving him with a wonderfully broad concept of modern American food. At his newest restaurant, The Dutch in Manhattan, you'll find dirty rice, Mexican-style tripe, fried chicken, freshly shucked oysters, and Asian glazed ribs on the same menu, which exemplifies Carmellini's vision of all-American eats.
His latest cookbook, American Flavor says it all. It's the story of Carmellini's unique relationship with food from casual road-tripping around the U.S. to earning his chops in Europe, working his way through the ranks of New York kitchens and eventually opening his own wildly successful and absolutely fantastic restaurants. And the stories are good, just as good as the recipes.
This week we'll be exploring Carmellini's take on American Flavor with a selection of recipes from the book including an American-Indian Lamb Chili with Chickpeas and Raita, The Dutch's Fried Chicken and Biscuits with Honey Butter, and Green Grits spiked with green chiles.
