Tips and tricks for making the best sandwiches at home.
It's hard to resist ordering something called "tongue bun." One, because it's filled with tongue. Two, because you get to say "tongue bun." Beyond the novelty, though, these are fine little creatures ($6 for 2) from East Side King. ESK is a trailer that Paul Qui, Moto Utsonomaya, and Ek Timrek (from Austin's much raved-about contemporary Japanese restaurant Uchi) set up in the backyard of Austin bar The Liberty. We've already visited the crazily-painted place for fried brussels sprouts and Thai Chicken Karaage, but these buns were a newer discovery.
The roasted beef tongue is everything you'd hope for, fall-apart tender with a bit of a crust; with the green crunch of basil, cilantro, and mint, the sharp bite of onion, a sparing hit of jalapeño and a sticky peanut butter curry, it's fresh and sweet and savory all at once, with so many layers of texture and flavor you just keep going back to experience more. While we prefer our buns the littlest bit softer, the whole package is so appealing it's impossible to mind.
